Message to Chinese food restaurants

Image on left, YES. Lean. Meaty.

Image on right - NO. Boney. Knuckle-y. Gristle-y.

Let us review then.

Spareribs on left - GOOD.

Knuckles on right - BAD.

I await your adjustment in this matter regarding honey garlic spareribs. Thank you.

..you're looking at this from a European point of view like Chinese people do it wrong. We've been making ribs like this for a long time, and jsut because it doesn't match your idea doesn't mean there's anything wrong with it. This assumption is colonially minded.

Nay. It's not an assumption at all. It's an observation and a preference. The first, second and third restaurant I ever had honey garlic spareribs at (in 2 different provinces) made them like the picture on the left. They were great. The last place I had them like that changed management once and my favourite kind disappeared. Now I can't find them anymore. Chinese people may have made them like the picture on the right for a long time, but they have also made them like the ones on the left. I like those kind better. And as the saying goes, if loving them is wrong, I don't want to be right. I will admit to this - most of the Chinese food I like at the restaurant is barely Chinese at all. It's Westernized food.
