MMmmmmmm.............. beets

I love beets. Always have. So it is with absolute amazement that I disclose to you that tonight was the first time I have ever made fresh beets to go with dinner. Having never cooked fresh beets before, I read a few directions on the web and decided to try roasting them. The directions said once they're roasted, it's a simple matter of running them under cold water and the skin should slip right off.

Well, either I have mutant beets or the instructions were a little misleading about the 'slip right off' part. That was by far the messiest supper task I've had to perform in a long time.

But the beets were good...................
